Elderflower Jelly

  • Dissolve the pectin in the cold elderflower cordial. Turn the heat up to medium and stir. Once the pectin has dissolved turn up the heat to maximum and let the mixture come to a boil. Keep it boiling for about 4 minutes and by boiling I mean let it bubble like crazy. Watch your hands, heated juice or cordial is a lot hotter than water due to the sugar.

  • Remove it from the stove top and let it stand for about 2-3 minutes. Pour it while it is still hot into sterilised jars and seal them. Let it set and cool down. Done. It is as easy as that. It's the most delicious jelly you could think of.
