  • 1 avocado pitted cleaned
  • 4 tbsp safflower oil or any liquid oil you prefer
  • 1 bulb of garlic roasted
  • 1 clove of garlic raw
  • 1 1/2 tsp rice vinegar
  • 1/4 tsp black pepper ground
  • 1 big pinch of salt or a bit more


  • Place all the ingredients in a food processor and let it run at high speed until a silky smooth mayonnaise is formed. Transfer into an airtight container and use within a day.


This mayonnaise has no preservatives and contains avocado, so it is best to make it the day you intend to eat it.
