Add the oats, vanilla and 250ml (1cup) almond milk to a bowl and stir well. Mix the chia seeds with 4 tablespoon of almond milk in another bowl. Let it sit while you peel and puree the mango. You can either use a blender for this or just chop it finely.
Add alternating layers of oats, mango and chia seeds into two jars and cover them. Place them in the fridge and enjoy your breakfast in the morning.
